Ingredients

  • 12 oz whole wheat pasta
  • 8 oz extra-firm tofu
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced
  • 2 cups spinach, fresh
  • 1 cup low-sodium vegetable broth
  • 4 oz cream cheese
  • 1 cup parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup fresh basil leaves, chopped

Directions

Step 1

Cook the pasta according to the package instructions until al dente. Drain and set aside.

While the pasta is cooking, drain and pat dry the tofu with paper towels. Cut it into small cubes.

In a large skillet, heat the olive oil over medium heat. Add the cubed tofu and sauté for about 5-7 minutes, or until golden brown on all sides. Remove the tofu from the skillet and set aside.
