  • 500 g boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 2 large russet potatoes, diced
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the chicken breasts into bite-sized pieces.

Step 2

Heat olive oil in a large pot over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.

Stir in the sliced carrots, chopped celery, and diced potatoes. Cook for 5 minutes, stirring occasionally.
