Ingredients

  • 3 cups cornflakes
  • 1.5 scoops protein powder (preferably vanilla or chocolate)
  • 0.5 cup almond butter
  • 0.25 cup honey or maple syrup
  • 0.5 cup dried cranberries
  • 0.5 cup mixed seeds (such as sunflower and pumpkin seeds)
  • 0.25 cup dark chocolate chips
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

In a large mixing bowl, add the cornflakes and gently crush them using the back of a wooden spoon or your hands until they are in smaller pieces, but not too finely crushed.

Step 2

Sprinkle the protein powder over the crushed cornflakes and toss to combine evenly.

Step 3

In a small saucepan, combine the almond butter and honey (or maple syrup) over low heat. Stir continuously until the mixture is smooth and well combined, then remove from heat.

Step 4

Pour the almond butter mixture over the cornflake and protein powder mixture. Add in the vanilla extract and salt, and mix until all the cornflakes are well coated.

Step 5

Fold in the dried cranberries, mixed seeds, and dark chocolate chips until they are evenly distributed throughout the mixture.

Step 6

Line a baking sheet with parchment paper.

Step 7

Using a spoon or a small ice cream scoop, portion out tablespoon-sized clusters of the mixture onto the prepared baking sheet. Press them together gently if they seem crumbly.

Step 8

Once all the clusters are formed, allow them to sit at room temperature or place them in the refrigerator for at least 1 hour to firm up.

Step 9

Store the hardened clusters in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
