Ingredients

  • 4 pieces high-protein chicken sausages
  • 4 pieces large eggs
  • 4 pieces whole wheat sandwich rolls
  • 4 slices cheddar cheese, sliced
  • 1 piece red bell pepper, sliced
  • 1 piece yellow onion, sliced
  • 1 cup baby spinach
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat a grill pan over medium heat and lightly grease it with 1 tablespoon of olive oil.

Step 2

Place the chicken sausages on the grill pan and cook for about 8-10 minutes, turning occasionally, until fully cooked and browned evenly.

Step 3

In a separate skillet, heat the remaining tablespoon of olive oil over medium heat.

Step 4

Add the sliced red bell pepper and onion to the skillet. Season with a pinch of salt and black pepper, and sauté for about 5 minutes, or until the vegetables are tender and caramelized.

Step 5

In another small nonstick skillet, over medium-low heat, crack the eggs and cook until the whites are fully set but the yolks remain slightly runny, about 3-4 minutes.

Step 6

Slice the sandwich rolls in half and lightly toast each half on a flat pan or toaster.

Step 7

Once the sausages are cooked, remove them from the grill and place one sausage on the bottom half of each sandwich roll.

Step 8

Top each sausage with a slice of cheddar cheese, followed by a layer of sautéed peppers and onions, a few baby spinach leaves, and a cooked egg.

Step 9

Finish by placing the top half of the roll on each sandwich and serve warm.
