Ingredients

  • 2 pounds Russet potatoes
  • 2 teaspoons Salt
  • 1 tablespoon Unsalted butter
  • 1.5 cups Whole milk
  • 1 cup Greek yogurt (plain)
  • 0.25 cup Whey protein isolate (unflavored)
  • 0.5 teaspoon Pepper
  • 2 tablespoons Chives (optional, for garnish)

Directions

Step 1

Peel and chop the russet potatoes into roughly 1-inch cubes for even cooking.

Step 2

Place the chopped potatoes in a large pot and cover with cold water by 1 inch. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes until they are fork-tender, about 15-20 minutes.

Step 4

While the potatoes are cooking, in a small saucepan over low heat, warm the milk and butter until the butter is melted. Do not boil.

Step 5

Drain the cooked potatoes well and return them to the pot. Allow them to sit in the pot for a couple of minutes to let excess moisture evaporate.

Step 6

Using a potato masher or ricer, mash the potatoes until smooth.

Step 7

Stir in the warm milk and butter mixture gradually, followed by the Greek yogurt, ensuring everything is well incorporated to achieve a creamy texture.

Step 8

Add the whey protein isolate in small quantities, stirring well after each addition to prevent clumping.

Step 9

Season the mashed potatoes with the remaining teaspoon of salt and the pepper to taste.

Step 10

Transfer to a serving dish and garnish with chives if desired.

Step 11

Serve warm and enjoy your high-protein classic mashed potatoes.
