  • 1 cup cognac
  • 1 cup dry white wine
  • 4 cups water
  • 1 sprig fresh thyme
  • 1 bay leaf
  • 1 cup non-fat Greek yogurt
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 ounces cooked shrimp, peeled and deveined
  • 2 tablespoons chives

Directions

Step 1

Begin by preparing the lobsters: Bring a large pot of water to a boil and cook the lobsters until bright red, about 8 minutes. Remove the lobsters from the pot and let them cool slightly before extracting the meat from the shells. Reserve both the meat and the shells.

Step 2

In a large pot, heat the olive oil over medium heat. Add the carrot, celery, onion, and garlic, cooking and stirring for about 5 minutes until the vegetables begin to soften.

Stir in the tomato paste and cook for another 2 minutes until it coats the vegetables.

Add the lobster shells, cognac, and dry white wine. Increase the heat to high and cook until the liquid is reduced by half.
