Preheat your oven to 350°F (175°C). Prepare an 8-inch round cake pan by setting it aside.
In a small saucepan over medium heat, combine 200 grams of white sugar with 60 ml of water. Stir until the sugar dissolves completely to form a syrup.
Continue to cook without stirring until the syrup turns into a light golden caramel, this should take about 8 to 10 minutes.
Carefully pour the caramelized sugar into the prepared cake pan, tilting the pan to ensure the bottom is evenly coated. Set aside to cool and harden.
In a large mixing bowl, whisk together 6 egg yolks and 2 whole eggs until well combined.
Add 60 grams of milk protein powder to the egg mixture, stirring until smooth and completely incorporated.
Gradually add in 300 ml of condensed milk, 370 ml of evaporated milk, and 1 teaspoon of vanilla extract, mixing until the ingredients are well-blended and there are no lumps.
Strain the custard mixture through a fine-mesh sieve into the prepared caramel-lined cake pan to ensure a smooth texture.
Cover the pan with aluminum foil to prevent the top of the flan from browning.
Place the cake pan in a larger baking dish and pour enough hot water into the larger dish to reach halfway up the sides of the cake pan, creating a water bath.
Carefully transfer to the preheated oven and bake for 50 to 55 minutes or until the flan is set but still slightly jiggly in the center.
Remove the flan from the oven, allow it to cool, then refrigerate for at least 4 hours, or overnight for best results.
To unmold, run a thin knife around the edges of the flan and invert onto a serving platter. The caramel will flow over the top, creating a beautiful glaze.
