Ingredients

  • 2 halves English muffin
  • 3 large Egg whites
  • 2 slices Turkey bacon
  • 0.5 cups Fresh spinach
  • 1 slice Cheddar cheese (reduced fat)
  • 0.125 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Begin by splitting the English muffin and toasting both halves until golden brown.

Step 2

Preheat a non-stick skillet over medium heat and add 1 teaspoon of olive oil.

Step 3

Add the turkey bacon slices to the skillet and cook for 3-4 minutes on each side until crispy. Set aside on a paper towel to drain excess fat.

Step 4

In the same skillet, add the fresh spinach and cook for about 1-2 minutes until wilted. Remove from the skillet and set aside.

Step 5

Pour the egg whites into the skillet and season with salt and black pepper. Cook for about 2-3 minutes, stirring occasionally until the egg whites are fully cooked and opaque.

Step 6

To assemble the sandwich, place the cooked egg whites on one half of the toasted English muffin, followed by the wilted spinach.

Step 7

Top with the slice of cheddar cheese. Place the crispy turkey bacon on top of the cheese.

Step 8

Close the sandwich with the other half of the English muffin and press down lightly.

Step 9

Optionally, return the assembled sandwich to the skillet for an additional minute on each side to melt the cheese slightly.

Step 10

Serve immediately and enjoy your High Protein Classic English Muffin Sandwich!
