Ingredients

  • 200 grams pitted dates
  • 250 milliliters boiling water
  • 1 teaspoon baking soda
  • 60 grams vanilla whey protein powder
  • 200 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 100 grams unsalted butter, softened
  • 100 grams brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 50 grams chopped walnuts

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

Step 2

Place the pitted dates in a bowl and pour the boiling water over them. Stir in the baking soda and let the mixture sit for 10 minutes to soften the dates.

Step 3

In a medium bowl, whisk together the vanilla whey protein powder, all-purpose flour, baking powder, cinnamon, and salt. Set aside.

Step 4

In a large bowl, cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.

Step 5

Add the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.

Step 6

Using a fork or potato masher, mash the softened dates until smooth and add them to the wet ingredients.

Step 7

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Step 8

Fold in the chopped walnuts until evenly distributed.

Step 9

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 10

Bake in the preheated oven for about 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 11

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 12

Serve warm or at room temperature. Enjoy your healthy, high-protein classic date cake!
