Ingredients

  • 8 ounces whole wheat elbow macaroni
  • 2 cups skim milk
  • 2 cups shredded cheddar cheese
  • 1 cup low-fat cottage cheese
  • 0.5 cup unflavored whey protein powder
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup Greek yogurt
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Add the whole wheat elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Step 2

While the pasta cooks, combine the skim milk, shredded cheddar cheese, low-fat cottage cheese, and unflavored whey protein powder in a blender. Blend until smooth and creamy.

Step 3

In a large saucepan over medium heat, melt the unsalted butter. Stir in the all-purpose flour and cook for about 1 minute, or until the mixture turns golden brown.

Step 4

Gradually whisk in the cheese and protein mixture into the saucepan, stirring constantly to prevent lumps.

Step 5

Add the Dijon mustard, salt, and black pepper. Continue to cook and stir for 3-5 minutes, or until the sauce has thickened.

Step 6

Remove the saucepan from heat and stir in the Greek yogurt and grated Parmesan cheese until well combined and creamy.

Step 7

Add the cooked macaroni to the cheese sauce and stir until the pasta is evenly coated.

Step 8

Garnish with chopped fresh parsley before serving, if desired.

Step 9

Serve immediately while warm and enjoy your high-protein classic creamy mac & cheese.
