Ingredients

  • 60 grams Whey protein powder (vanilla)
  • 280 grams All-purpose flour
  • 240 ml Unsweetened almond milk
  • 7 grams Instant yeast
  • 50 grams Granulated sugar
  • 0.5 teaspoons Salt
  • 50 grams Unsalted butter, melted
  • 1 large Egg
  • 100 grams Brown sugar
  • 2 tablespoons Ground cinnamon
  • 120 grams Greek yogurt, plain
  • 120 grams Powdered sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a small pot, gently warm the almond milk until it is warm to the touch but not hot. Transfer to a large mixing bowl.

Step 2

Stir in the yeast and 1 tablespoon of granulated sugar. Let it sit until frothy, about 5 minutes.

Step 3

Add the remaining granulated sugar, melted butter, and egg to the yeast mixture. Whisk until combined.

Step 4

In a separate bowl, combine all-purpose flour, whey protein powder, and salt. Gradually add this dry mixture to the wet mixture, stirring with a wooden spoon until a dough forms.

Step 5

Knead the dough on a floured surface for about 5-7 minutes, until it is smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 45 minutes to 1 hour.

Step 6

Preheat your oven to 180°C (350°F) and grease a rectangular baking tin.

Step 7

For the filling, mix together brown sugar and cinnamon in a small bowl. Set aside.

Step 8

Punch down the risen dough and roll it out on a floured surface to form a rectangle roughly 14x9 inches in size.

Step 9

Spread the Greek yogurt evenly over the dough, followed by the cinnamon sugar mixture.

Step 10

Starting from the long edge, carefully roll the dough into a tight log. Cut into 12 equal pieces and place them, cut side up, in the prepared baking tin.

Step 11

Cover the rolls with a damp cloth and let them rise again for about 20 minutes.

Step 12

Bake in the preheated oven for 20-25 minutes, or until golden brown.

Step 13

While the rolls are baking, prepare the glaze by mixing powdered sugar, vanilla extract, and enough almond milk to achieve a drizzling consistency.

Step 14

Once the cinnamon rolls are done, let them cool slightly and then drizzle with the glaze before serving.
