Ingredients

  • 200 grams dark chocolate (70% cocoa)
  • 300 grams silken tofu
  • 2 tablespoons unsweetened cocoa powder
  • 2 scoops whey protein powder (chocolate flavor)
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or agave syrup
  • 3 large egg whites
  • 0.25 teaspoon cream of tartar
  • 0.125 teaspoon sea salt
  • 30 grams chopped dark chocolate

Directions

Step 1

Begin by melting the dark chocolate either using a double boiler or by microwaving in 15-second intervals, stirring between each, until fully melted. Set aside to cool slightly.

Step 2

In a blender or food processor, combine the silken tofu, cocoa powder, chocolate protein powder, vanilla extract, and honey. Blend until the mixture is smooth and creamy.

Step 3

Pour in the melted chocolate into the blender or food processor and blend again until well incorporated, scraping down the sides as needed.

Step 4

In a clean, dry bowl, beat the egg whites with a hand mixer or stand mixer on medium speed until foamy.

Step 5

Add the cream of tartar and sea salt to the egg whites and continue to beat until they form stiff peaks, being careful not to overbeat.

Step 6

Gently fold the chocolate mixture into the beaten egg whites using a spatula. Be careful to maintain the fluffiness of the egg whites by gently incorporating the chocolate.

Step 7

Divide the mousse into four serving cups or bowls, smoothing the tops with the back of a spoon.

Step 8

Chill in the refrigerator for at least 2 hours, or until set.

Step 9

Before serving, garnish with a sprinkle of chopped dark chocolate.
