Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 pieces garlic cloves, minced
  • 3 medium carrots, sliced
  • 3 pieces celery stalks, sliced
  • 8 cups low-sodium chicken broth
  • 1 15-ounce can chickpeas, drained and rinsed
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped
  • 0.5 pieces lemon, juiced

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.

Stir in the sliced carrots and celery, and continue to sauté for another 5 minutes.

Place the chicken breasts into the pot and pour in the chicken broth.
