Ingredients

  • 12 pieces Lasagna noodles
  • 15 ounces Ricotta cheese
  • 15 ounces Cottage cheese
  • 2 large Eggs
  • 1 cup Parmesan cheese, grated
  • 4 cups Mozzarella cheese, shredded
  • 1 pound Ground lean turkey
  • 2 tablespoons Olive oil
  • 1 large Onion, chopped
  • 3 Garlic cloves, minced
  • 4 cups Marinara sauce
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Italian seasoning

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add lasagna noodles and cook for about 8-10 minutes, or until al dente. Drain and rinse with cold water. Set aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until onion is translucent, about 5 minutes.

Step 4

Add ground turkey to the skillet. Cook until browned and no longer pink, breaking apart with a spatula, about 8-10 minutes.

Step 5

Stir in marinara sauce, salt, black pepper, and Italian seasoning. Bring to a simmer and let cook for an additional 5 minutes. Remove from heat.

In a large bowl, combine ricotta cheese, cottage cheese, eggs, and Parmesan cheese. Mix until well incorporated.

To assemble the lasagna, spread a thin layer of meat sauce on the bottom of a 9x13 inch baking dish.

Repeat the layers two more times (sauce, noodles, cheese mixture, mozzarella), ending with a final layer of noodles topped with remaining meat sauce and mozzarella cheese.

Cover with aluminum foil and bake in preheated oven for 35 minutes.

Remove the foil and bake uncovered for an additional 25 minutes, or until cheese is bubbly and golden brown.

Step 12

Let the lasagna rest for at least 15 minutes before serving to allow it to set.

Step 13

Garnish with additional grated Parmesan and fresh basil if desired before serving.
