  • 0.5 cup water
  • 2 tablespoons butter
  • 0.5 teaspoon salt
  • 1 cup cottage cheese
  • 4 ounces cream cheese
  • 0.5 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon oil
  • 0.25 cup powdered sugar

Directions

Step 1

In a medium bowl, whisk together the flour, whey protein powder, eggs, milk, water, and salt until the mixture is smooth and free of lumps.

Melt the butter in a small saucepan or microwave and add it to the batter, mixing well. Let the batter rest for 10 minutes.

Meanwhile, in a blender or food processor, combine the cottage cheese, cream cheese, Greek yogurt, vanilla extract, sugar, and lemon zest. Blend until smooth and creamy. Set the filling aside.
