Ingredients

  • 4 large Russet potatoes
  • 2 pieces Chicken breast
  • 4 tablespoons Olive oil
  • 2 cups Cheese curds
  • 2 cups Beef or chicken stock
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Preheat your oven to 450°F (230°C).

Step 2

Wash and peel the potatoes, then cut them into 1/4-inch thick fries.

Step 3

Place the cut potatoes in a bowl of cold water and let them soak for about 15 minutes to remove excess starch.

Step 4

Drain the potatoes and pat them dry with a clean towel.

Step 5

Toss the dried potatoes with 3 tablespoons of olive oil, salt, pepper, and garlic powder.

Step 6

Spread the fries in a single layer on a baking sheet lined with parchment paper.

Step 7

Bake the fries in the oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Step 8

While the fries are baking, season the chicken breast with salt and pepper.

Step 9

Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

Step 10

Cook the chicken breasts for 6-7 minutes on each side, or until fully cooked and no longer pink in the center.

Step 11

Remove the chicken from the skillet, let it rest for a few minutes, then slice it into bite-sized pieces.

Step 12

In a saucepan, melt the butter over medium heat. Add the flour and whisk it constantly for 1-2 minutes until smooth and bubbly.

Step 13

Gradually whisk in the beef or chicken stock. Bring it to a simmer while continuing to whisk, until the sauce begins to thicken.

Step 14

Mix the cornstarch and cold water in a small bowl until smooth, then whisk it into the simmering gravy. Cook for another 1-2 minutes until the gravy thickens to your desired consistency.

Step 15

Remove the gravy from heat and season with additional salt and pepper if necessary.

Step 16

To assemble the poutine, place a generous portion of fries on a serving platter or individual plates.

Step 17

Top the fries with the sliced chicken breast and scatter cheese curds over the top.

Step 18

Pour hot gravy over the cheese curds, fries, and chicken.

Step 19

Serve immediately and enjoy your High Protein Classic Canadian Poutine!
