Ingredients

  • 3 cups all-purpose flour
  • 0.5 cups whey protein powder
  • 2.25 teaspoons active dry yeast
  • 1 cup warm milk
  • 0.25 cup granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 cups vegetable oil, for frying
  • 1 cup jam or jelly
  • 0.5 cup confectioners' sugar

Directions

Step 1

In a small bowl, dissolve the yeast in warm milk and let it sit for 5-10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour, protein powder, and sugar.

Step 3

Make a well in the center and add the melted butter, eggs, yeast mixture, salt, and vanilla extract.

Step 4

Mix the ingredients until a dough begins to form.

Step 5

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

Step 6

Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

Step 7

Punch down the dough and roll it out to about 1/2-inch thickness.

Step 8

Cut out rounds using a 3-inch doughnut cutter or glass. Transfer the doughnuts to a greased baking sheet.

Step 9

Cover these with a towel and let them rise again for another 30 minutes.

Step 10

Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C).

Step 11

Carefully slide doughnuts into the hot oil, frying them on each side for about 2-3 minutes until golden brown.

Step 12

Remove the doughnuts with a slotted spoon and drain them on paper towels.

Step 13

Fill a pastry bag fitted with a small tip with jam or jelly.

Step 14

Insert the tip into the side of the doughnuts and squeeze some filling inside.

Step 15

Dust the filled doughnuts with confectioners' sugar before serving.
