Ingredients

  • 1 cup all-purpose flour
  • 1 scoop whey protein powder (vanilla or unflavored)
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1 large egg
  • 1 cup milk
  • 0.5 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 1 cooking spray or extra butter for greasing the pan

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, whey protein powder, baking powder, baking soda, salt, and sugar until well combined.

Step 2

In another bowl, beat the egg lightly, then mix in the milk, Greek yogurt, and vanilla extract until the mixture is smooth.

Step 3

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid over-mixing; a few lumps are fine.

Step 4

Melt the butter in a small bowl and let it cool slightly. Stir the cooled butter into the pancake batter.

Step 5

Preheat a non-stick griddle or frying pan over medium heat. Lightly coat with cooking spray or a small amount of butter.

Step 6

Using a 1/4 cup measuring cup, pour batter onto the griddle for each pancake. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.

Step 7

Flip the pancakes using a spatula and cook until golden brown on the other side and cooked through, about 2 more minutes.

Step 8

Repeat with the remaining batter, greasing the griddle as needed, until all the pancakes are cooked.

Step 9

Serve warm with your choice of toppings such as maple syrup, fresh fruit, or nuts.
