Ingredients

  • 2 cups All-purpose flour
  • 1 cup Protein powder (vanilla or unflavored)
  • 2.25 teaspoons Active dry yeast
  • 0.75 cup Milk
  • 0.25 cup Unsalted butter
  • 0.25 cup Granulated sugar
  • 1 large Egg
  • 0.5 teaspoon Salt
  • 1 tablespoon Ground cinnamon
  • 0.5 cup Brown sugar
  • 0.25 cup Whey protein isolate
  • 1 teaspoon Vanilla extract
  • 1 portion Egg wash (1 egg beaten with 1 tablespoon water)

Directions

Step 1

In a small saucepan, warm the milk until it's lukewarm (about 110°F). Remove from heat and add the active dry yeast along with a teaspoon of the granulated sugar. Stir to combine and let it sit for 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine the all-purpose flour and protein powder. Add the yeast mixture, melted butter, granulated sugar, egg, and salt. Mix together until a dough forms.

Step 3

Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic. Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 4

Meanwhile, in a small bowl, mix together the brown sugar, ground cinnamon, and whey protein isolate for the filling.

Step 5

Once the dough has risen, punch it down and roll it out onto a floured surface into a large rectangle, approximately 12x16 inches.

Step 6

Spread the melted butter over the rolled out dough and sprinkle the cinnamon sugar mixture evenly over the surface.

Step 7

Start at one long edge and tightly roll the dough into a log shape. Slice the log into 12 even pieces.

Step 8

Place the slices in a greased or parchment-lined baking dish. Cover them again and let them rise for another 30 minutes.

Step 9

Preheat your oven to 350°F (175°C). Brush the top of the buns with the egg wash.

Step 10

Bake in the preheated oven for 20-25 minutes or until golden brown.

Step 11

Let the buns cool slightly before serving. Enjoy your high protein cinnamon sugar morning buns hot or at room temperature!
