Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup vanilla protein powder
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter
  • 0.5 cup Greek yogurt
  • 1 unit large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 2 tablespoons coarse sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the all-purpose flour, vanilla protein powder, granulated sugar, baking powder, ground cinnamon, and salt until well combined.

Step 3

Cut the unsalted butter into small cubes and add them to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate medium-sized bowl, whisk together the Greek yogurt, egg, and vanilla extract until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and gently stir until the dough begins to come together. Be careful not to over-mix.

Step 6

Turn the dough out onto a floured surface and gently knead it a few times until it forms a cohesive ball. If the dough is too sticky, add a little more flour as needed.

Step 7

Shape the dough into a flat, round disc about 1 inch (2.5 cm) thick. Using a sharp knife or a bench scraper, cut the disc into 8 equal wedges.

Step 8

Transfer the wedges to the prepared baking sheet, leaving a little space between each scone.

Step 9

Brush the tops of the scones with milk using a pastry brush, and sprinkle with coarse sugar if desired.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Step 11

Remove from the oven and let the scones cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Step 12

Serve warm or at room temperature, and enjoy your delicious high protein cinnamon scones!
