Ingredients

  • 125 grams all-purpose flour
  • 1 teaspoon baking powder
  • 20 grams unsweetened cocoa powder
  • 0.5 teaspoon salt
  • 60 grams whey protein powder (chocolate or vanilla)
  • 75 grams granulated sweetener (e.g., monk fruit sweetener)
  • 1 large egg
  • 120 ml milk
  • 75 grams plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 30 ml melted coconut oil
  • 60 grams dark chocolate chips
  • 1 tablespoon coconut oil for glaze

Directions

Step 1

Preheat the oven to 180°C (350°F) and lightly grease a doughnut pan with non-stick cooking spray.

Step 2

In a large bowl, whisk together the all-purpose flour, baking powder, cocoa powder, salt, and whey protein powder until well combined.

Step 3

In another bowl, beat together the granulated sweetener, egg, milk, Greek yogurt, vanilla extract, and melted coconut oil until smooth.

Step 4

Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix the batter.

Step 5

Spoon the batter into a piping bag (or a resealable plastic bag with the corner snipped off) and pipe the batter into the prepared doughnut pan, filling each well about two-thirds full.
