Ingredients

  • 100 grams dark chocolate (70% cocoa or higher)
  • 60 grams unsalted butter
  • 50 grams vanilla whey protein powder
  • 30 grams ground almonds
  • 10 grams cocoa powder
  • 2 large eggs
  • 2 large egg yolks
  • 50 grams caster sugar
  • 1 pinch pinch of salt
  • 1 as needed non-stick spray or butter for greasing

Directions

Step 1

Preheat your oven to 200°C (400°F). Lightly grease 4 small ramekins with non-stick spray or butter.

Step 2

In a microwave-safe bowl, melt the dark chocolate and butter in the microwave in 30-second intervals, stirring after each until smooth. Be careful not to overheat.

Step 3

In a separate bowl, whisk together the eggs, egg yolks, and caster sugar until pale and fluffy.

Step 4

Gradually fold the melted chocolate mixture into the egg mixture until well combined.

Step 5

In a separate bowl, combine vanilla whey protein powder, ground almonds, cocoa powder, and a pinch of salt.

Step 6

Gently fold the dry ingredients into the chocolate mixture until just combined. Do not overmix to maintain a light texture.

Step 7

Evenly distribute the batter into the prepared ramekins, filling each about three-quarters full.

Step 8

Place the ramekins on a baking tray and bake in the preheated oven for about 8-10 minutes. The edges should be firm while the center remains soft.

Step 9

Once baked, let the fondants cool for a minute before gently running a knife around the edges to loosen them.

Step 10

Turn each fondant out onto a plate and serve immediately, preferably with a dollop of Greek yogurt or a scoop of low-fat ice cream on the side.
