Ingredients

  • 1.5 cups Almond flour
  • 1 cup Whey protein powder
  • 0.75 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 Large eggs
  • 1 cup Granulated erythritol or sugar
  • 1 teaspoon Vanilla extract
  • 0.5 cup Unsweetened almond milk
  • 0.5 cup Chopped dark chocolate or chocolate chips
  • 0.5 cup Powdered sugar for rolling

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together almond flour, whey protein powder, cocoa powder, baking powder, and salt until well combined.

Step 3

In a large mixing bowl, beat together the eggs and granulated erythritol (or sugar) with an electric mixer until thick and pale. This should take about 2-3 minutes.

Step 4

Add the vanilla extract and almond milk to the egg mixture and beat until combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms. Stir in the chopped dark chocolate or chocolate chips.

Step 6

Using a cookie scoop or tablespoon, portion out dough and roll into 1-inch balls. There should be about 24 balls.

Step 7

Place the powdered sugar into a shallow bowl. Roll each dough ball generously in the powdered sugar until fully coated.

Step 8

Place the sugar-coated balls onto the prepared baking sheets, spaced about 2 inches apart to allow spreading.

Step 9

Bake in the preheated oven for 10-12 minutes, until the cookies are puffed and crinkled but still soft in the center.

Step 10

Let the cookies cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely. Enjoy your high-protein chocolate crinkle cookies!
