Ingredients

  • 120 ml water
  • 70 g unsalted butter
  • 1 pinch salt
  • 75 g all-purpose flour
  • 2 units large eggs
  • 15 g whey protein powder
  • 250 ml low-fat milk
  • 25 g unsweetened cocoa powder
  • 20 g cornstarch
  • 50 g granulated sugar
  • 1 tsp vanilla extract
  • 150 g greek yogurt

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the water, butter, and salt. Heat the mixture over medium heat until the butter is melted and the mixture begins to boil.

Step 3

Remove from heat, add the flour all at once, and stir vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.

Step 4

Return the pan to the heat and cook the dough for another 1-2 minutes to dry it out, stirring constantly.

Step 5

Transfer the dough to a mixing bowl and allow it to cool for a minute.

Step 6

Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next. The dough should be smooth and glossy.

Step 7

Stir in the whey protein powder until well combined.

Step 8

Spoon or pipe 8 mounds of dough onto the prepared baking sheet, spacing them evenly.

Step 9

Bake for 20-25 minutes, or until puffed and golden brown. Do not open the oven door during baking as this can cause them to collapse.

Step 10

Turn off the oven and allow the puffs to sit in the closed oven for an additional 5 minutes.

Step 11

Remove from the oven and cool on a wire rack.

Step 12

For the filling, mix the milk, cocoa powder, cornstarch, and sugar in a saucepan over medium heat. Whisk continuously until the mixture thickens and begins to bubble.

Step 13

Remove from the heat and stir in the vanilla extract. Allow to cool to room temperature.

Step 14

Fold the Greek yogurt into the cooled chocolate mixture until smooth and well combined.

Step 15

Slice the top off each puff and fill with a generous spoonful of chocolate cream. Replace the top and serve immediately or chill for later.
