Ingredients

  • 1 cup protein powder
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 2 large eggs
  • 1.5 cups milk (or milk alternative)
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons unsalted butter (melted)
  • 0.5 cup mini chocolate chips
  • 0 cooking spray or additional butter

Directions

Step 1

In a large bowl, combine the protein powder, all-purpose flour, baking powder, and salt. Whisk these dry ingredients together until they are well combined.

Step 2

In a separate bowl, beat the eggs and then add the milk, vanilla extract, honey or maple syrup, and melted butter. Whisk these wet ingredients until smooth.

Step 3

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it's okay if there are a few small lumps.

Step 4

Fold in the mini chocolate chips gently into the batter.

Step 5

Preheat a non-stick skillet or a griddle over medium heat. Lightly grease with cooking spray or a little butter.

Step 6

Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface of the pancakes, around 2-3 minutes.

Step 7

Flip the pancakes carefully and cook for another 1-2 minutes, or until they are golden brown and cooked through.

Step 8

Keep pancakes warm in a low-temperature oven while you finish cooking the remaining batter.

Step 9

Serve the pancakes immediately with additional honey, syrup, or fresh fruit if desired.
