Ingredients

  • 2 cups rolled oats
  • 1 cup chocolate protein powder
  • 1 cup almond butter
  • 0.5 cup honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds
  • 0.5 cup mini chocolate chips
  • 0.25 cup unsweetened shredded coconut
  • 0.25 teaspoon salt

Directions

Step 1

Line an 8-inch square baking pan with parchment paper, leaving an overhang on the sides to lift the bars out easily later.

Step 2

In a large mixing bowl, combine the rolled oats, chocolate protein powder, chia seeds, shredded coconut, and salt. Stir well to distribute the dry ingredients evenly.

Step 3

In a microwave-safe bowl, combine almond butter and honey. Microwave for about 30 seconds to 1 minute, until the mixture is warm and easily stirred. Alternatively, melt the mixture on the stovetop over low heat.

Step 4

Add the vanilla extract to the almond butter and honey mixture, and stir until smooth.

Step 5

Pour the wet ingredients over the dry ingredients and mix thoroughly until everything is well combined.
