  • 1 cup Cherry tomatoes, halved
  • 1 Avocado, sliced
  • 0.25 cup Fresh cilantro, chopped
  • 4 Large whole wheat tortillas
  • 1 cup Shredded cheddar cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large skillet over medium heat. Add the diced red onion and sauté for 3-4 minutes until softened.

Add the minced garlic to the skillet and sauté for an additional 1 minute, until fragrant.

Stir in the shredded chicken, black beans, chopped chipotle peppers, and ground cumin. Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through.
