Preheat your oven to 300°F (150°C).
Season the beef brisket with salt and pepper on both sides.
In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the brisket and sear on both sides until browned, about 4-5 minutes per side. Remove the brisket and set aside.
In the same pot, add the chopped onion and garlic cloves, sautéing until fragrant and the onion is translucent, about 3-4 minutes.
Add the chipotle peppers in adobo sauce and stir well, cooking for an additional 2 minutes.
Pour in the beef broth and lime juice, stirring to combine. Return the seared brisket to the pot, ensuring it's covered in the liquid and aromatics.
