  • 2 pounds beef brisket
  • 2 tablespoons olive oil

  • 2 whole chipotle peppers in adobo sauce

  • 1 large onion
  • 2 cups beef broth
  • 2 tablespoons lime juice
  • 2 cups brown rice
  • 1 cup black beans
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 whole avocado
  • 0.5 cup fresh cilantro
  • 1 cup cheddar cheese
  • 0.5 cup sour cream

Directions

Step 1

Preheat your oven to 300°F (150°C).

Season the beef brisket with salt and pepper on both sides.

In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the brisket and sear on both sides until browned, about 4-5 minutes per side. Remove the brisket and set aside.
