Directions

Step 1

Whisk the eggs in a bowl with the almond milk, salt, black pepper, cumin powder, and coriander powder until well combined.

Finely chop the cherry tomatoes, green chili, bell pepper, and red onion. Set them aside separately.

Heat olive oil in a non-stick skillet over medium heat.
