  • 2 medium carrots, sliced
  • 2 stalks celery stalks, sliced
  • 3 cloves garlic cloves, minced
  • 8 cups low-sodium chicken broth
  • 1 leaf bay leaf
  • 1 cup orzo pasta
  • 3 cups spinach, chopped
  • 2 tablespoons lemon juice
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Add the chicken breasts to the pot and cook them for about 6-8 minutes on each side, or until they are browned and cooked through. Remove the chicken from the pot and set it aside to cool slightly.
