Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup whey protein powder (vanilla flavored)
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 0.5 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk of choice (dairy or plant-based)
  • 1 cup dark chocolate chips
  • 0.5 cup chopped nuts (such as almonds or walnuts)

Directions

Step 1

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and line two baking sheets with parchment paper.

Step 2

In a large bowl, combine the rolled oats, whey protein powder, almond flour, baking soda, and salt. Stir well to mix all the dry ingredients thoroughly.

Step 3

In a separate bowl, cream together the softened butter and honey using a hand mixer or stand mixer until smooth and creamy.

Step 4

Add the eggs, one at a time, to the butter mixture, beating well after each addition. Mix in the vanilla extract and milk.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Step 6

Fold in the dark chocolate chips and chopped nuts by hand, ensuring they are evenly distributed throughout the dough.

Step 7

Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes until the edges are lightly golden. The centers may seem soft, but they will firm up as they cool.

Step 9

Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to a week.
