  • 1 cup cottage cheese
  • 0.5 cup plain Greek yogurt
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped
  • 0.5 cup cooked and crumbled bacon
  • 0.5 teaspoon garlic powder

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly. Pat them dry with a kitchen towel.

Step 3

Pierce each potato several times with a fork to allow steam to escape during baking.

Step 4

Rub each potato with olive oil and sprinkle them evenly with half of the salt and pepper.

Place the potatoes directly on the oven rack and bake for 60 minutes, or until tender when pierced with a fork.
