  • 12 oz penne pasta
  • 1 lb lean ground turkey
  • 1 tbsp olive oil

  • 3 garlic cloves, minced
  • 28 oz canned crushed tomatoes
  • 1 tsp dried Italian seasoning
  • 1 cup cottage cheese
  • 1.5 cups part-skim mozzarella cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 2 cups fresh spinach, roughly chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil, add the penne pasta, and cook until al dente according to package instructions. Drain and set aside.

Meanwhile, in a large skillet over medium heat, add the olive oil and sauté the diced onion until it becomes translucent, about 3-4 minutes.

Add the minced garlic to the onion and cook for another 1 minute.
