Ingredients

  • 500 grams lean pork loin
  • 200 grams chicken breast
  • 30 grams whey protein isolate (unflavored)
  • 2 tablespoons fish sauce
  • 2 teaspoons sugar
  • 1 teaspoon black pepper
  • 1 teaspoon baking powder
  • 48 grams potato starch
  • 100 milliliters ice water
  • 3 large pieces banana leaves
  • 1 as needed kitchen string

Directions

Step 1

Start by slicing the lean pork loin and chicken breast into small pieces for easier processing. Use a food processor to finely grind the meats together until they form a smooth paste.

Step 2

In a mixing bowl, combine the pork and chicken paste with unflavored whey protein isolate, fish sauce, sugar, black pepper, baking powder, and potato starch. Mix thoroughly until all ingredients are well incorporated.

Step 3

Gradually add the ice water to the meat mixture to maintain its moisture and help bind the ingredients together. Continue mixing until the paste becomes sticky and well blended.

Step 4

Lay out the banana leaves on a flat surface. Cut them to fit your desired sausage size — typically about 10 inches long.

Step 5

Spoon the meat mixture onto the banana leaves. Shape into a log, leaving about an inch of leaf on all sides for wrapping.

Step 6

Tightly roll the banana leaves around the meat paste, ensuring there are no air pockets. Fold the edges over securely and tie the roll with kitchen string to hold the banana leaves in place.

Step 7

Fill a large pot with water and bring to a boil. Once boiling, reduce the heat to a simmer and place the wrapped sausages in the pot.

Step 8

Simmer for about 60 minutes, ensuring the sausages are fully submerged and the water maintains a gentle boil.

Step 9

Once cooked, remove the sausages from the water and let them cool to room temperature.

Step 10

Unwrap from the banana leaves before slicing and serving. Enjoy as an appetizer, with rice, or in sandwiches.
