Ingredients

  • 1 medium head cauliflower
  • 200 grams extra firm tofu
  • 3 pieces large eggs
  • 100 grams peas
  • 1 medium carrot
  • 3 stalks green onions
  • 3 cloves garlic
  • 1 inch piece ginger
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red chili flakes

Directions

Step 1

Break the cauliflower into florets and pulse in a food processor until it resembles rice-like grains. Alternatively, you can use a box grater to achieve this texture.

Step 2

Drain the tofu and pat it dry with paper towels to remove excess moisture. Cut the tofu into small cubes.

Step 3

In a large non-stick skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the tofu cubes and cook until they are golden brown on all sides, around 6-8 minutes. Remove and set aside.

Crack the eggs in a bowl, beat them lightly, and set aside.

Dice the carrot and chop the green onions. Mince the garlic cloves and grate the ginger.
