Ingredients

  • 1 head Cauliflower florets
  • 2 large Eggs
  • 1 cup Almond flour
  • 0.75 cup Parmesan cheese, grated
  • 0.25 cup Whey protein powder, unflavored
  • 1 cup Mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Garlic powder
  • 0.5 cup Marinara sauce
  • 0.25 cup Fresh basil leaves
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and steam or microwave until tender. Allow to cool slightly, then pulse in a food processor until it reaches rice-like consistency.

Transfer the cauliflower rice to a cheesecloth or a clean kitchen towel and squeeze out as much moisture as possible.

In a large bowl, combine the drained cauliflower rice, eggs, almond flour, grated Parmesan, whey protein powder, half of the mozzarella, Italian seasoning, salt, and garlic powder. Mix until a dough forms.
