Ingredients

  • 4 pieces whole grain tortillas
  • 8 ounces lean turkey sausage
  • 6 large eggs
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 2 cups spinach leaves
  • 1 medium red bell pepper, diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup salsa, optional

Directions

Step 1

Heat a large non-stick skillet over medium heat and add olive oil.

Step 2

Add diced red bell pepper and cook for 3-4 minutes until slightly softened.

Step 3

Add the turkey sausage to the skillet and cook for about 5-6 minutes, breaking it up into crumbles with a spatula until fully cooked.

Step 4

Whisk the eggs in a bowl with salt and black pepper, then pour into the skillet with the sausage and bell pepper. Stir frequently until eggs are softly scrambled and fully cooked.

Step 5

Stir in the black beans and spinach leaves until the spinach is wilted, about 2 minutes.

Step 6

Remove the skillet from heat and let the mixture cool slightly.

Step 7

Warm the tortillas in the microwave for about 15 seconds to make them more pliable.

Step 8

Divide the egg mixture evenly among the tortillas, sprinkle each with shredded cheddar cheese, and add salsa if desired.

Step 9

Roll up each tortilla, folding the sides in to seal the filling, creating a burrito shape.

Step 10

Serve immediately or wrap each burrito individually in foil to enjoy on the go.
