Ingredients

  • 4 pieces Chicken breast halves
  • 4 slices Swiss cheese slices
  • 4 slices Cooked ham slices
  • 1 cup High protein breadcrumbs
  • 3 large Egg whites
  • 0.25 cup Whey protein powder, unflavored
  • 0.5 cup Whole wheat flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 as needed Olive oil cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pound each chicken breast to about 1/4-inch thickness using a meat mallet or a heavy skillet to ensure even cooking.

Step 3

Place a slice of Swiss cheese and a slice of ham on each chicken breast. Roll them up tightly and secure with toothpicks.

Step 4

In a shallow bowl, combine the high protein breadcrumbs with the unflavored whey protein powder. Set aside.

Step 5

In another shallow bowl, whisk the egg whites until frothy. Set aside.

Step 6

Place the flour on a plate and season with salt and black pepper.

Step 7

Dredge each chicken roll first in the flour mixture, then in the egg whites, and then roll in the high protein breadcrumb mixture, ensuring an even coating.

Step 8

Prepare a baking sheet by lining it with parchment paper and lightly spraying with olive oil cooking spray.

Step 9

Place the breaded chicken rolls onto the prepared baking sheet.

Step 10

Lightly spray the top of each chicken roll with olive oil cooking spray to encourage browning.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breading is golden brown. The internal temperature should reach 165°F (74°C).

Step 12

Remove from the oven and let rest for a few minutes. Remove the toothpicks before serving.

Step 13

Slice each roll crosswise and serve warm. Enjoy your high protein Chicken Cordon Bleu!
