Ingredients

  • 2 cups Whole wheat flour
  • 0.5 cup Chickpea flour (besan)
  • 1 cup Greek yogurt
  • 0.5 cup Whey protein isolate, unflavored
  • 1 teaspoon Baking powder
  • 1 teaspoon Sugar
  • 1.5 teaspoons Salt
  • 0.75 cup Warm water
  • 2 tablespoons Vegetable oil (for mixing dough)
  • 3 cups Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine whole wheat flour, chickpea flour, and whey protein isolate with baking powder, sugar, and salt. Mix well.

Step 2

Add Greek yogurt and 2 tablespoons of vegetable oil to the dry ingredients. Mix using your hands until it forms a crumbly texture.

Step 3

Slowly add warm water, a little at a time, and knead the mixture into a soft, pliable dough. Adjust the quantity of water as needed; the dough should not be sticky.

Step 4

Cover the dough with a damp cloth and let it rest for at least 30 minutes at room temperature to enhance the texture.

Step 5

After resting, divide the dough into equal portions (about 10-12) and roll each portion into a smooth ball.

Step 6

On a floured surface, roll out each ball into a round disc approximately 5-6 inches in diameter, keeping them slightly thick.

Step 7

Heat 3 cups of vegetable oil in a deep frying pan or wok over medium-high heat until it is hot but not smoking.

Step 8

Carefully slide in one rolled disc at a time. Fry, pressing gently with a slotted spoon, until the bhatura puffs up and becomes golden brown on both sides.

Step 9

Remove the fried bhatura using the slotted spoon and place on paper towels to drain excess oil.

Step 10

Serve hot with chole or your choice of curry.
