  • 2 pounds Beef chuck, cut into 1-inch cubes

  • 4 pieces Garlic cloves, minced
  • 3 medium Carrots, sliced
  • 2 pieces Celery stalks, chopped
  • 8 ounces Button mushrooms, sliced
  • 6 cups Beef broth, low sodium
  • 1 15-ounce can Canned black beans, drained and rinsed
  • 1 15-ounce can Canned kidney beans, drained and rinsed
  • 2 tablespoons Soy sauce
  • 1 teaspoon Dried thyme
  • 1 piece Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Spinach leaves
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Heat olive oil in a large heavy-bottomed pot over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside.

Step 2

In the same pot, add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

Step 3

Stir in sliced carrots, chopped celery, and mushrooms. Cook until the vegetables are slightly softened, about 5 minutes.
