Directions

Step 1

Begin by preparing the vegetables: peel and finely dice the carrot, deseed and chop the red bell pepper into small cubes, and trim the ends off the snow peas.

Mince the ginger and garlic, and thinly slice the green onions, keeping the white and green parts separate.

Heat one tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat.
