  • 4 pieces Large flour tortillas
  • 2 cups Cooked pinto beans
  • 1 cup Cheddar cheese, shredded

  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a medium skillet, heat olive oil over medium heat. Add the chopped red onion and sauté until soft, about 3 minutes. Add garlic powder and ground cumin, stirring for 1 minute until aromatic.

Add the cooked pinto beans to the skillet. Use the back of a spoon or a potato masher to partially mash the beans, creating a chunky texture. Season with salt and black pepper. Cook for an additional 3 minutes, stirring occasionally, until heated through. Remove from heat.
