Ingredients

  • 500 grams All-purpose flour
  • 7 grams Baking powder
  • 7 grams Instant yeast
  • 50 grams Sugar
  • 250 ml Warm water
  • 40 grams Unsalted butter, melted
  • 5 grams Salt
  • 300 grams Ground chicken
  • 200 grams Tofu, crumbled
  • 30 ml Soy sauce
  • 15 ml Oyster sauce
  • 10 grams Ginger, minced
  • 10 grams Garlic, minced
  • 30 grams Green onion, chopped
  • 15 ml Sesame oil
  • 2 grams Black pepper

Directions

Step 1

In a large bowl, combine all-purpose flour, baking powder, sugar, and instant yeast.

Step 2

Gradually add warm water and melted butter to the dry ingredients, mixing continuously until a dough forms.

Step 3

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 5

To make the filling, heat sesame oil in a pan over medium heat and sauté minced ginger and garlic until fragrant.

Step 6

Add ground chicken to the pan and cook until browned.

Step 7

Stir in crumbled tofu, soy sauce, oyster sauce, black pepper, and chopped green onions. Cook until everything is well combined and the mixture is slightly dry. Remove from heat and let it cool.

Step 8

Punch down the risen dough and divide it into 12 equal portions.

Step 9

Flatten each portion into a circle and add about a tablespoon of the meat filling in the center.

Step 10

Pinch the edges of the dough together to seal and shape into a bun.

Step 11

Prepare a steamer with water and bring it to a boil.

Step 12

Line the steamer trays with parchment paper or lightly grease them.

Step 13

Place the buns in the steamer with enough space between each for expansion. Cover and steam over medium-high heat for 15-20 minutes.

Step 14

Once done, remove the buns from the steamer and let them cool slightly before serving hot.
