Ingredients

  • 2 large croissants
  • 4 large eggs
  • 4 slices bacon
  • 4 slices sharp cheddar cheese
  • 1 tablespoon butter
  • 2 tablespoons milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon chopped chives

Directions

Step 1

Preheat the oven to 350°F (175°C) to warm the croissants later.

Step 2

Place a non-stick skillet over medium heat. Add bacon slices and cook until crispy, turning occasionally for about 5-7 minutes. Remove bacon and place on a plate lined with paper towels to drain excess fat.

Step 3

In a small mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 4

Melt butter in another skillet over medium-low heat. Pour in the egg mixture.

Step 5

Stir gently with a spatula, folding the eggs over as they cook. Cook for about 3-5 minutes or until the eggs are just set and still slightly runny. Remove from heat, as they will continue to cook with residual heat.

Step 6

Slice the croissants in half horizontally and place them on a baking sheet. Lay one slice of cheddar cheese on the bottom half of each croissant. Place in the oven for about 3 minutes, until the cheese melts slightly and the croissant is warm.

Step 7

To assemble, layer two slices of bacon over the melted cheese on each croissant. Divide the scrambled eggs evenly among the croissants, placing them on top of the bacon.

Step 8

Top each with another slice of cheese. Sprinkle with chopped chives.

Step 9

Place the top half of the croissant over the cheese, gently pressing down.

Step 10

Serve immediately while warm and enjoy your high-protein breakfast croissant.
