Ingredients

  • 1 medium ripe avocado
  • 120 grams Greek yogurt
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 20 grams fresh cilantro
  • 1 medium garlic clove
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons water

Directions

Step 1

Cut the ripe avocado in half, remove the pit, and scoop the flesh into a blender or food processor.

Step 2

Add the Greek yogurt, lime juice, olive oil, and honey to the blender.

Step 3

Wash and roughly chop the cilantro and add it to the blender.

Step 4

Peel the garlic clove, and add it whole to the blender.

Step 5

Sprinkle in the salt and black pepper.

Step 6

Blend the mixture until smooth and creamy. If the dressing is too thick, add water one tablespoon at a time until you reach the desired consistency.

Step 7

Taste and adjust seasoning if necessary, adding more lime juice, salt, or pepper to suit your taste.

Step 8

Transfer the dressing to a serving dish or jar. Use immediately or store in the refrigerator for up to three days.
