Ingredients

  • 2 pounds ground beef
  • 1 medium onion
  • 3 large garlic cloves
  • 2 teaspoons dried oregano
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat oven to 325°F (165°C).

Step 2

Chop the onion into coarse chunks and place in a food processor. Pulse until finely chopped. Transfer the chopped onion to a clean kitchen towel and squeeze out as much moisture as possible.

Step 3

Return the onion to the food processor along with the garlic cloves, oregano, rosemary, thyme, cumin, coriander, salt, and black pepper. Process until finely mixed and forms a paste.

Step 4

In a large mixing bowl, combine the ground beef with the onion-spice mixture. Mix thoroughly using your hands to ensure the spices are evenly distributed throughout the meat.

Step 5

Prepare a loaf pan by brushing it lightly with olive oil.

Step 6

Press the beef mixture firmly into the loaf pan, ensuring there are no air pockets and the top is smooth.

Step 7

Place the loaf pan in a larger baking dish to catch any extra fat that drips. Put in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 165°F (75°C).

Step 8

Once cooked, remove from the oven and let the meat rest in the pan for 10 minutes.

Step 9

Carefully drain any excess fat from the loaf pan, then turn the meat onto a cutting board.

Step 10

Use a sharp knife to slice the gyro meat thinly.

Step 11

Serve the beef gyro slices immediately with pita bread, lettuce, tomatoes, and tzatziki sauce, or freeze for later use.
