Ingredients

  • 2 cups Brown rice
  • 4 cups Water
  • 2 tablespoons Olive oil
  • 1 pound Boneless, skinless chicken breast
  • 1 pound Shrimp, peeled and deveined
  • 3 large Eggs
  • 1 cup Frozen peas and carrots
  • 3 Green onions, sliced
  • 2 cloves Garlic, minced
  • 3 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the brown rice under cold water until the water runs clear. Place the rice and water in a medium saucepan and bring to a boil over high heat.

Step 2

Once boiling, reduce the heat to low, cover, and simmer for 40 minutes, or until the rice is cooked and the water is absorbed. Fluff the rice with a fork and set aside.

Step 3

While the rice is cooking, cut the chicken breast into bite-sized pieces.

Step 4

In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add another tablespoon of olive oil. Add the peeled and deveined shrimp. Cook for 2-3 minutes, until pink and opaque. Remove the shrimp and set aside with the chicken.

Step 6

In the empty skillet, reduce the heat to medium and crack the eggs into the pan. Scramble them until fully cooked, then remove and set aside with the chicken and shrimp.

Step 7

Add the minced garlic to the skillet and sauté for about 30 seconds. Then add the frozen peas and carrots. Cook for 2-3 minutes until thawed and heated through.

Step 8

Return the chicken, shrimp, and scrambled eggs to the skillet. Add the cooked brown rice, soy sauce, and sesame oil. Stir everything together to combine well.

Step 9

Add the sliced green onions, salt, and black pepper. Stir for another 1-2 minutes until all ingredients are warmed through and evenly distributed.

Step 10
