Rinse the Toor Dal and Moong Dal under running water until the water runs clear.
In a pressure cooker, add the rinsed dals, 4 cups of water, salt, and turmeric powder. Close the lid and pressure cook for 3-4 whistles or until the dals are soft and cooked through. Set aside.
In a deep pan, heat ghee (or oil) over medium heat. Add cumin seeds and let them splutter.
Add a pinch of asafoetida, followed by chopped onions. Sauté until the onions turn golden brown.
Stir in the minced garlic, grated ginger, and slit green chilies. Cook for another 2 minutes until fragrant.
Add chopped tomatoes and cook until they become soft and the oil starts to leave the sides.
Mix in the spinach leaves and cook until wilted.
Add the paneer cubes and cook for 2-3 minutes, allowing them to absorb the flavors.
Sprinkle red chili powder, coriander powder, and garam masala. Stir well to combine.
Pour the cooked dal into the pan and mix everything thoroughly. Simmer for 5-7 minutes to blend the flavors.
Adjust the consistency of the dal by adding more water if needed. Check the seasoning and add more salt if necessary.
Turn off the heat and add fresh cilantro and lemon juice. Stir well.
Serve hot with steamed rice or chapati, garnished with additional cilantro if desired.
