Ingredients

  • 3 medium Apples
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 200 grams Whole wheat flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 60 grams Protein powder (vanilla or plain)
  • 100 grams Unsalted butter
  • 100 grams Brown sugar
  • 2 large Eggs
  • 120 grams Greek yogurt
  • 120 milliliters Milk
  • 50 grams Rolled oats
  • 50 grams Chopped nuts (almonds or walnuts)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a round 9-inch cake tin with parchment paper.

Step 2

Peel, core, and thinly slice the apples. Toss them in a bowl with lemon juice, vanilla extract, and half the cinnamon. Set aside.

Step 3

In a medium bowl, combine the whole wheat flour, baking powder, salt, remaining cinnamon, and protein powder. Mix well and set aside.

Step 4

In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Stir in the Greek yogurt and milk until combined.
