Ingredients

  • 1.5 cups Whole wheat flour
  • 0.5 cup Unflavored whey protein powder
  • 1 tablespoon Baking powder
  • 0.25 teaspoon Salt
  • 2 teaspoons Ground cinnamon
  • 0.5 cup Unsalted butter, cold and cubed
  • 1 large Egg
  • 0.5 cup Greek yogurt
  • 3 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 1 medium Apple, peeled, cored, and diced

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the whole wheat flour, whey protein powder, baking powder, salt, and ground cinnamon.

Step 3

Add the cubed cold butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, beat the egg. Then, mix in the Greek yogurt, honey, and vanilla extract until well combined.

Step 5

Stir the wet ingredients into the dry ingredients using a wooden spoon until the dough just comes together. Do not overmix.

Step 6

Gently fold in the diced apple, ensuring they are evenly distributed throughout the dough.

Step 7

Turn the dough onto a lightly floured surface and shape it into a round disc about 1 inch thick.

Step 8

Using a sharp knife, cut the dough into 8 even wedges, similar to cutting a pizza.

Step 9

Place the scones onto the prepared baking sheet, leaving some space between each one.

Step 10

Bake in the preheated oven for about 18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Step 11

Remove from the oven and allow the scones to cool on a wire rack for at least 10 minutes before serving.
